Simple Overnight Breakfast Casserole
Ingredients:
1 – 20 oz bag frozen hash browns
1 lb shredded sharp cheddar
1 package bacon cooked and chopped (I use the Ninja food processor to make quick work of this! / precooked bacon can be used, but won’t taste as good)
8 eggs
1 cup milk
1/2 tsp salt
1 tsp ground mustard
Directions:
Preheat oven to 350 degrees
Spray 9 x 13 glass casserole dish w/ Pam
First layer: evenly spread hash browns in pan
Second layer: cover hash browns with most of the cheese (save enough to cover the top)
Third layer: spread the chopped bacon over the cheese
Fourth layer: beat 8 eggs, one cup milk, 1/2 tsp salt, 1 tsp mustard and pour over casserole
Sprinkle the remainder of the cheese over the top. Cover with foil and let sit overnight in the refrigerator.
In the morning, keep covered and bake for 1 hour at 350 degrees. Remove cover and bake for another 15 minutes until eggs are set.
